Beetroot: Isn’t all just about being pink and purple. There are loads of different varieties and colours. We love to use it in Salads with some creamy goats cheese and nuts (we use hazelnuts) it adds amazing colour to the dish.
It’s also full of anti oxidants so is great for a hangover!! (not sure what else it is good for).Baby Beetroot is fantastic in Salads. Beetroot Soup is a very well known hangover cure and the colour makes your poo very interesting too ;-)!!!
At Shells we grew golden and candied beetroot (has a white stripe) in our little herb garden, it was great to introduce people to different variety of beetroot and it became a bit of a talking point too.. encouraging people to connect more with veg…
This salad has great flavours and fantastic colours. We also show you how to ‘supreme’ an orange, a handy tip to have.
1 small packet wild rocket
4 small precooked beetroot
50g (1⁄3 cup) feta cheese
Tablespoon almond flakes
Quarter the beetroot and toss around in a bowl with a drizzle of balsamic reduction.
Build the salad with rocket leaves, beetroot, orange segments and cubed feta cheese (a nice hard goats cheese will also do).
Drizzle some more balsamic and a scattering of flaked almonds.
To make it more beautiful, add a few edible flowers – so summery so fresh!
